Ethiopia Yirgacheffe — Organic Arabica

Ethiopia is widely regarded as the birthplace of Arabica coffee, and the Yirgacheffe region in the south of the country is famous for delicate, floral cups. This organic coffee is grown by certified organic smallholders who cultivate heirloom varieties at 1,700 to 2,200 metres above sea level. At that altitude the cherries ripen slowly, giving the beans density and a lively acidity.

The coffee is washed after harvest, which produces a clean, transparent flavour profile and lets the character of the region shine through: citrus, bergamot, blossom and a touch of tropical fruit. We roast it deliberately light so that this freshness stays intact instead of being masked by roast flavours.

In the cup, this Yirgacheffe is light and elegant, almost tea-like, with a long, fruity finish. It is at its best as a filter coffee brewed in a V60, a Kalita or a Chemex, and it also shows its bright, clear side in a drip machine or an AeroPress.
