Behind the cup
Huila in southern Colombia is one of the country's best-known coffee regions. Around Palermo, smallholders grow their coffee at impressive altitudes of 1,600 to 2,400 metres, mainly the Caturra, Castillo and Colombia varieties. The altitude means slowly ripening cherries and a pronounced, juicy sweetness.
The coffee is fully washed, resulting in a clean, fruity profile with notes of peach, tropical fruit, cream and honey. A delicate, citrus-like acidity combines with the sweetness of red and tropical fruit to create a round, lively cup.
We roast Palermo Huila medium so that it works as a true all-rounder. In a pour-over or drip machine it is juicy and clean; as espresso it is fruity and sweet with a creamy body. With milk, for example as a flat white, it still shows lovely peach notes.
These Colombian coffee beans are ideal if you like fruity sweetness but do not want a very light roast. Order them whole or ground for filter or espresso.
